Classic 8bit is too constrained, but how about 8bit++? 6809 with some 16bit I mean.
To avoid price, obtainability, reliability problems go the FPGA route.
There is an interesting design at turbo9.org for a 6809 implementation. (impressed by the team BTW)

Might even run a version of Lisp for 6800 if BASIC is not exactly your thing.
